I know I am a couple days late, but MERRY CHRISTMAS! I hope everybody had a wonderful day! I kicked off my Christmas weekend with a 20 mile run. It was long, it was cold, and I was more than happy to get that run over with. As much as I was NOT enjoying my run, I continued to remind myself to be grateful to have legs that allow me to run. I’m pretty sure I repeated “I can do ALL things through Christ who strengthens me” 573 times. It’s amazing how important mental strength is! Anyways, in Japan, Christmas is typically celebrated with a Christmas cake and Kentucky Fried Chicken! I didn’t get KFC, but I was surprised with this beauty:

And while we’re on the topic of food, I perfected the shrimp etouffee! I used to dislike cooking, but I am actually starting to enjoy it more now!
